Summer has arrived! Enjoy this dairy-free and gluten-free blackberry and chocolate-chip filled ice cream all summer long. Add the chocolate chips if you want to treat yourself or leave them out to keep it paleo-friendly. As things heat up this ice cream recipe is sure to cool you down while satisfying that sweet tooth.

Instructions
  1. In a saucepan, simmer blackberries, honey and lemon juice over medium heat about 20 minutes to break down – stirring occasionally
  2. In a mixing bowl, combine coconut milk, mashed banana and vanilla
  3. Place in fridge to cool
  4. In a mixing bowl, combine coconut milk, mashed banana and vanilla
  5. Add cooled berry mixture to bowl and combine
  6. Pour into electric ice cream maker
  7. Churn until mixture starts to freeze
  8. Sprinkle in chocolate chips during last 5 minutes of churning
  9. Spoon into bowls and enjoy, or pack into ice cream containers and freeze
